  1. I have an out-of-town guest coming Tuesday to stay for a week, and I am on
    vacation this coming week! So I am tearing the house apart, steam cleaning
    the rugs and such. I wanted something easy.

    We had big salads--a mix of crisp iceberg, romaine, and spinach with
    shredded purple cabbage and carrots, dark red kidney beans, chopped
    hardboiled eggs, shredded sharp cheddar, diced scallions and ranch dressing.
    Fresh strawberries for dessert.

    Having had a relatively "healthy" breakfast of oatmeal w/banana,
    toast, and o.j., we splurged on fat for lunch. I sliced some corn
    tortillas into strips and lightly fried them. Then fried some
    leftover pinto beans with some chopped scallions in vegetable oil,
    seasoned with chili powder and cumin. Fried eggs over easy. Plated:
    tortilla strips, beans, more strips, egg, garnished with chopped
    cilantro and avocado slices. Fresh salsa on the side. Not nearly as
    complex and delicious as real chilaquiles but tasty for a thrown
    together lunch. -aem

    room and kitchen and runners in the hall.

    Oh yes, Elaine ... had to have her big salad, they did not serve it at
    all of the restaurants... She whined of course. But then they all
    whined, I loved Seinfeld, watched them alla gazilliion times. My
    favorite episode was the puffy shirt episode...
