  1. Daughter-unit Alpha made this recipe for our lunches today.

    Taco Salad with Chicken

    Ingredients
    4 corn tortillas
    2 chicken breast, shredded
    3 jalapeno peppers, chopped
    1/3 cup coarsely crushed corn chips
    1 can (15 oz.) black (or pinto) beans, rinsed and drained
    1/4 cup green onions, chopped
    1/2 cup tomato salsa
    2 cups shredded iceberg, green and red leaf lettuces
    1 dollop of sour cream or crème frâiche
    Salt

    METHOD:
    Salt and fry up corn tortillas into crispy disks. Set aside on
    paper towels to allow excess oil to drain into paper towels. Shred
    chicken breast meat and set aside. Chop up green onions,
    jalapenos. Shred a mix of iceberg, green leaf and red leaf
    lettuces. Toss beans, chicken, greens, jalapenos, and salsa
    together. Liberally sprinkle with crushed corn tortilla pieces.
    Place a dollop of crème frâiche on top; sour cream has a nice
    bite. Salt to taste.

    It can also be garnished with avocado but why ruin a good salad?!

    Really. Lose the green onions and include the avocado.
    I'd also omit the "tomato salsa" in favor of fresh tomatoes,
    especially cherry tomatoes, and serve a non-tomato salsa on the side.
    Using crème frâiche (or Mexican style sour cream) is much better than
    American type sour cream.
    Green onions are OK if served on the side, as is chopped cilantro
    (leaves only, not stems), and perhaps some chopped red onion.

    Way too many dishes to clean. I think Daughter-unit Alpha used:
    one skillet, three bowls (one for the salad, two for serving said
    salad), a knife, a cutting board, and two forks (shredding the
    chicken, serving the salad, and then noshing down on said salad).
    Putting everything out as a build-your-own-salad defeats the
    purpose of keeping it simple and quick.

    This post was timely...
    I was trying to decide on some sides for some whole crabs (Dungeness)
    I'm fixin' to take over to my sister's place. My brother in law has just
    been diagnosed with Diverticulitis flare up and needs a low residue (low
    fiber) diet.

    Avocado ought to fit the bill in small amounts as it's soft and not
    terribly high in fiber for a fruit?

    Gahds ferbid! The stuff I use is made by a local mom-n-pop outlet
    (Garcia's Rojo) with lots of chunky onions, bea-yuuuu-teeful
    cilantro and excellent tomatoes; it's almost a salsa fresca (raw
    everything). It's very runny and has just the right kick for this
    salad. There's also a refrigerated national brand (the name
    escapes me now) that I've purchased at multiple Safeways across
    the PRC (People's [DemoKratic] Republic of California) that is
    also pretty good.

    You say, "Gahds ferbid! " but people on this NG use condensed cream of
    mushroom/celery soup, ketchup, Velveeta, jarred mayo and lots of other
    stuff as "ingredients" that are worse than Pace salsa, and all salsas
    belong in the category of condiments rather than ingredients.
