  1. Stuffed Cucumber Snacks

    1 large English(seedless) cucumber
    1/2 cup deli ham salad or garlic-and-herb cream cheese spread
    thin orange or lemon slices cut into small wedges, if desired

    Using a vegetable peeler, cut lengthwise strips of peel down 4 sides of
    the cucumber, making a square shape, some peel will remain. Cut cucumber
    into 1 inch slices. Using a melon baller, make an indentation into the
    center of each slice. Fill indentation with a mound of the deli salad or
    cream cheese, about 2 tsp. Top each with wedge of lemon or orange or a
    herb of your choice, dill would be good.

    This came from a Pillsbury Summer Appetizers book available at the
    grocery checkout.
