Potato-Crusted Halibut
Serves 1
Published in: Cincinnati Post
1 Halibut fillet
1 potato -- such as Yukon Gold
Oil
Seasoned salt
Season fillet with salt. Peel and shred the potato. Top halibut with the
shredded potato thickly enough so you can barely see the fish. Heat oil
in a medium skillet so it is very hot. Add the halibut, potato side down.
Use a second utensil to ease it down and avoid splashing the oil. When
the potato is golden brown, remove from the skillet and finish cooking
the halibut in a 400-degree oven for 10 minutes. .
