  1. Foil Baked Chicken and Vegetables

    Serving Size : 4

    4 boneless skinless chicken breast halves
    2 carrots, cut into 1" slices
    8 ounces fresh mushrooms, sliced 1/4" thick
    1 large zucchini, sliced
    4 tablespoons butter or margarine
    8 tablespoons chicken broth or cooking sherry
    Pepper, to taste
    Seasoned salt, to taste

    Preheat oven to 350 F. Tear off four 12-inch pieces of foil. Place 1 chicken
    breast on each piece of foil. Cover each piece of chicken with 1/4 of the
    vegetables, butter, chicken broth, and seasonings, dividing ingredients
    equally. Fold foil around each breast to make a tight pouch. Place foil
    packages on cookie sheet and bake 30 to 40 minutes.

    VARIATION: Many combinations of vegetables can be used in this dish. Onions,
    yellow squash, potatoes, and green beans are favorites.
