  1. Asparagus Quiche

    Servings: 100

    8 1/3 cups shredded Swiss cheese
    4 1/8 cups shredded Cheddar cheese
    8 1/3 cups chopped asparagus
    2 1/16 cups chopped leeks
    4 1/8 cups sliced mushrooms
    100 california fresh eggs
    8 1/3 cups milk
    8 1/3 cups whipping cream
    nutmeg, to taste
    pepper, to taste

    Preheat oven to 375 degrees. Grease 10" × 12" pan. Spread cheese on bottom
    of pan and top with vegetables. Whisk together eggs, milk, cream, nutmeg
    and pepper. Pour over cheese and vegetables. Bake about 45 minutes or
    until knife inserted in center comes out clean.
