Sausage And Mushroom Skillet Dinner
Serves 4
Published in: Fast Lane
1 tablespoons olive oil
1/2 pounds Italian sausage
3 large cloves garlic -- minced, about 1 tablespoon
8 ounces sliced mushrooms
2 6-ounce cans white beans
1 4-16 ounces canned crushed tomatoes
1 teaspoons oregano or mixed Italian herbs
Heat oil in a wide skillet over medium-high heat. Add the Italian sausage
and garlic. Stir the sausage occasionally so it cooks through. Add
mushrooms, and cook about five minutes, stirring occasionally, or until
they have darkened and glisten. Add canned beans, tomatoes and oregano.
Cook at least until hot. If you have the time, simmer a few minutes to
let the flavors blend. Cook until it heats through. If you are cooking
ahead and need to refrigerate or let the mixture stand or simmer a while,
you may want to add a little water. Serves four.
Recipe Notes
The Fast Lane column describes menus for busy cooks, using a minimum
of ingredients and allowing express checkout at the supermarket.
Flour, sugar, salt, pepper and oil or butter are presumed to be
staple ingredients at
