  1. Snickers Cheesecake

    Recipe By: Pat Belanger

    2 cup crushed chocolate wafer cookies (or Oreo crumbs)
    1/3 cup melted butter
    1/4 cup sugar
    1 1/2 pounds cream cheese (3 large bars)
    1 cup sugar
    4 eggs
    1 tsp. vanilla extract
    2/3 cup whipping creeam
    6 Snickers bars
    4 ozs. semi-sweet chocolate
    1/2 cup whipping cream.

    Preheat oven to 350 degrees F. In bowl, combine chocolate wafer crums,
    butter and sugar. Press into the bottom of a 10" springform pan.
    Chill. In large bowl, beat together the cream cheese and sugar until
    smooth. Add eggs, vanilla and 2/3 cup whipping cream and beat until
    well blended. Cut Snickers bars into 1/2" pieces. Spread pieces evenly
    over the bottom of the chocolate wafer crust. Pour cream cheese mixture
    over top and bake for one hour and 15 minutes. Let cool to room
    temperature, then refrigerate. Melt remaining whipping cream and four
    ozs. of chocolate in a small pan and stir until smooth. With a spatula,
    spread chocolate over the top of cheesecake. Refrigerate.

    Originally posted in the London Free Press by the food editor some
    years ago but I have modified it slightly. A local bakery sells
    these cheesecakes here for about $35.
