    Cooking time: 15 minutes

    1 pound cooked boneless, skinless chicken breasts
    2 ounces low-fat cream cheese
    1 tablespoon fresh chopped basil
    salt and pepper to taste
    4 large flour tortillas
    1/2 cup shredded, low-fat mozzarella cheese
    1 cup chopped lettuce or spinach leaves
    1 cup chopped tomatoes

    Have the kids shred the chicken into thin pieces and set aside in a small
    bowl. Have the kids mix the cheese, basil, salt and pepper together with
    a spoon. The kids can also help assemble the roll ups. Spread the cheese
    mixture on the tortillas. Top with chicken, dividing it evenly among the
    tortillas. Sprinkle the mozzarella cheese, lettuce leaves and tomatoes on
    top of the chicken. Roll up tightly. You can make these ahead and chill
    them overnight, individually wrapped in plastic. Slice in half on the
    diagonal and serve at room temperature.
