A 'what have we got in the cupboard?' meal

  1. We went to Orlando for the weekend (food report in another post) and
    DH didn't want to go get groceries when we got home... I cleaned out
    the fridge before we left, so pickings were a bit sparse tonight, and
    I made a 'what have we got left in the fridge?' dinner - ground beef,
    onion, half a red pepper, a stick of celery, a can of tomato sauce, a
    can of small tomatoes (cut in half so they stayed chunky) and a
    generous amount of frozen thyme equaled a pretty good spaghetti sauce,
    especially when topped with some grated cheese. 🙂

    Some of my best meals have come from making due with whatever was there.
    It forces one to be a bit more creative, I think?

    Amazing what one can whip up with very few ingredients isn't it? I still
    remember the pasta I made the night we moved. We were dog tired and it was
    midnight. Pickings were slim as I had cleaned out the fridge and pantry
    before the movers got there. Pasta noodles are a given staple around here.
    In the fridge I had a stick of butter, cheese, a head of lettuce and some
    veggies. IIRC it was a red bell pepper and some carrots. I made pasta and
    topped it with a basil butter sauce with bell pepper and a can of diced
    tomatoes. Not too bad but not real good. It was edible.

    I agree! And it's kind of fun to have to stretch the imagination. I enjoy
    the challenge. :~)
