    I canceled the koyote account for a high-speed upgrade that didn't
    require some sort of radio tower in the courtyard out front of the
    house (it was a tale of woe and wonder best left untold), and along
    with the loss of my beloved, ancient email address I lost access to
    the koyote NNTP server. So now I'm left with Google till something
    better comes along.

    Eggs in onion sauce
    For 4 persons

    8 eggs
    1/4 l (1/2 US pint) milk
    2 tablespoons butter
    3 tablespoons cream
    4 onions, finely minced
    2 tablespoons chives, chopped
    salt, pepper
    1 tablespoon flour

    1. Cook the eggs in salted water for 6 minutes, so that the yolks do
    not set. Plunge in cold water and peel.

    2. Fry the onions in butter, do not let them take up colour. Sprinkle
    with flour and stir thoroughly. Take from the heat, let cool a bit and
    deglaze with milk.

    3. Heat again and cook for 10 minutes. Pass the sauce through a sieve,
    season well, and heat again.

    4. Mix in the cream or, if the sauce is too thick, thin it out with
    milk.

    5. Place the eggs on a pre-warmed platter, pour over the very hot sauce
    and sprinkle with chives.

    Thanks for the recipe. You eat this dish, just as is? It is not poured
    over noodles or rice? Can you tell us what would you serve with it? I
    may try it.

    Sounds like a great dish for a last minute meal. Eggs are high in
    protein, and my colesterol is not a problem, it is around 160. Thanks.
