  1. On a whim I ordered guanciale from Niman Ranche. They had a promotion
    going, and I got two big chunks for the price of one. I'm curious as to
    whether anyone has recommendations for using this stuff, outside of the
    standard pasta recipes. I was thinking of using it in baked beans, in a
    BLT, and maybe in some pea soup.

    You could use it as a substitute for bacon, just slice it thick and fry it
    along with eggs: wonderful.
    Other uses which come to mind:

    - thinly sliced and wrapped around a shrimp, quickly sauteed and then
    dressed with some balsamic vinegar
    - thinly sliced, placed on just-fried polenta bars: watch it melt and then
    go for it
    - dice and sauteed with some minced onion and garlic, can be the base for
    many kinds of soups or stews
