Breakfast - Left over Taco

  1. I made shredded beef tacos last night. I usually keep my own taco and
    fajita mix on hand and usually make it myself. The seasoning measurements
    are approximate and can be adjusted any way you like it. I usually make a
    bunch of it up and seal individual servings of it in foil which I put into
    a sealed jar for later use. I almost ALWAYS add a bit more garlic to it
    and sometimes if I have dried jalapeno or habanero on hand I'll pulverize
    them and add to the mix. I got the original recipe from recipezaar.com
    which is the mix posted below.

    Taco seasoning mix:

    2 teaspoons instant onion, Minced
    1 teaspoon chili powder
    1/2 teaspoon dried red peppers, Crushed
    1/4 teaspoon dried oregano
    1 teaspoon salt
    1/2 teaspoon cornstarch
    1/2 teaspoon instant garlic, Minced
    1/2 teaspoon cumin, Ground

    To make the shredded taco meat I cheated this time. I was out and about
    all day so I put a chuck roast and some chopped onion in the crock pot. I
    cooked it on high for about 8 hours and shredded it. I put the shredded
    meat back into the slow cooker along with the juices and added the taco
    seasoning mix. I kept the temp on low for an hour or 2 stirred and served
    on (store bought) taco shells. I whipped up my version of spanish rice as
    a side dish. I also made my own guac and for garnish I had some shredded
    asadaro cheese and some shredded cheddar with lettuce, chopped green onion,
    black olives, small diced tomato and sour cream. Oh... I also had salsa.
    Not a bad meal and very tasty. Anyway I had left over taco salad for
    breakfast 😉

    I don't think it's regional. I buy dehydrated garlic and onion flakes or
    minced. Onion and garlic powders might work as well in the recipe but I've
    not tried them. The 2 links below show minced, powdered etc. I use the
    minced garlic. Second link is onion. Several different types of onion can
    be found. I buy mine at Penzeys but you can find some variation of them at
    the local supermarket most likely.
