Plantains

  1. I bought 2 plantains yesterday and plan to serve them tonight with
    fajitas (didn't cook it yesterday) and am making homemade guacamole.
    How do you all usually cook them? I've never done anything with them
    before but usually get them at restaurants. TIA!

    I have always fried them very slowly in oil and butter. They caramelize
    nicely in time.

    I think that double frying them works the best.

    Slice them about 1" thick slices, a bit on the diagonal. Heat up your
    oil to about 325°, pretty hot but not smoking. Fry them, 2 minutes each
    side. Place on something to drain that's flat, but place them on their
    ends, not flat on their sides. We place on brown paper from grociery
    sacks. Then mash them so they are about 1/2" thick with a spastula or
    wooden spoon. Now they can sit around till supper time. Refry them,
    this time for 3-4 minutes on each side, till they are golden brown and
    delicious.

    If they are still green - in other words, not ripe - I use Alton Brown's
    recipe. You can find it on the FoodTV website, it is really good. If
    they are ripe I just peel and slice them and pan fry until golden brown.
    Pay attention - because of the sugar they are easy to burn.

    On one of Foodnetwork's Good Eats episodes (EA1G18, Going Bananas), Alton
    Brown prepared a Fried Plantains recipe that looked especially good to me.
    I haven't yet tried it, but you might want to take look and see if it
    appeals to you.

    Plantains are rarely if ever used for dessert. It's a mistake to think
    of them as a large banana - they are different.

    butter, then salt them as I take them out of the pan. They're so
    delicious! My friend from Malawi deep-fries them, and they're out
    of this world, but I don't do much deep frying.

    There is an Afro - Caribbean food store a ways north of me, I plan on going
    there soon to scope out things and plantains will be something I'll be on
    the lookout for...

    This works for me when they are in the yellow state (or even black.)
    This is the way I fix them as a dessert, I believe another poster said
    as much.
    I fry them slowly in butter or coconut oil or a combination of both.
    They will carmelize a bit, become softer.
    Then I put some very thick maple syrup or honey on them. Best served
    with a good hot strong cup of coffee.
