My understanding is that the old ones are tougher, but have more
flavor. It's true with all other animals. Just avoid the diabetic
ones.
Questions:
1- Obtaining raw material? Is that something they carry at whole
foods? Or is it a mail order item?
2- I'm thinking, smoking on a converted 55 gallon drum grill set.
Advice?
3- What spices go well?
