Glazed Nuts

  1. I have many childhood memories of my mother creating these delightful
    treats during the holidays and for special family gatherings. I had
    several pounds of walnuts I purchased at the local Farmers Market this
    past Saturday, so decided to have a nostalgic experience over the
    flames of my stove this evening.

    GLAZED NUTS

    1 Cup Brown Sugar
    1/2 Cup White Sugar
    1/2 Cup Evaporated Milk
    1 Teaspoon Vanilla
    3 Cups Walnuts

    Combine Sugar with Milk. Boil till soft ball stage. Add Vanilla,
    stir in Walnuts. Stir till nuts are coated.

    Pour on wax paper and separate.

    Yes, it gets hard. . .Not like peanut brittle hard, but pleasantly
    hard. It is actually the consistency of the coating that I like so
    much.

    That's not glazed nuts. That's caramel with nuts... coat with
    chocolate and you'll have walnut pralines.

    GLAZED WALNUTS

    1/2 c. butter
    1 c. brown sugar
    1 tsp. cinnamon
    1 lb. walnuts

    Melt butter in 2 quarts container. Add brown sugar and cinnamon. Stir
    until dissolved in butter. Cook 2 minutes on high. Add walnuts. Stir
    into glaze. Cook 3-5 minutes on high. Spread on aluminum foil to cool.

    in a slow oven.

    After looking in 5 places where I was sure I'd find the recipe,
    it was in the place I was sure I wouldn't. Note: This is better
    made on a dry day, as is anything crisp. Vary spices to taste.

    SPICED PECANS

    1/2 c. granulated sugar
    4 tsp cinnamon
    1 1/2 tsp powdered ginger
    3/4 tsp. nutmeg
    1/2 tsp. ground cloves
    1/2 tsp cayenne (optional)
    1 tsp. salt
    dash of cardamom
    2 egg whites
    5 cups pecan halves

    Combine spices in small bowl. In a large bowl, beat egg whites till
    frothy. Stir in pecans until well-coated. Sprinkle with sugar mixture,
    tossing to coat.

    Spread on 2 lightly greased baking sheets. (I also line them with
    aluminum foil.)

    Bake at 325 degrees (rotating sheets halfway through cooking) for 30
    minutes or until the coating is crisp and nuts are fragrant.
    Cool well before storing.
