On the PD-5600 you can adjust the release tension of the clip making it easier or harder to clip out, I'd also have a look at the Shimano PD-6620, this is the newest Shimano design only recently released and has certain advantages over the 5600 style design. Its a bit more expensive but worth it, if you search around you can get it at a good price.

The PD-R540 has this very adjustment. I know this because I have a set which I was thinking of upgrading to 105, and running the R540's on my fixie - but if there are no real differences between them (apart from the 105 label) I guess i'll hold on to my coins and buy another set of R540's.
