Or use Avid rotors with DT's very nifty center-lock adapter. . .

the outer radius, axle spacing and thickness of the disk should be the
same, but check the inner radius of the shimano compared to the avids.
iirc, the shimano disks have a larger inner radius so running them
against a pad that will wear part of the spider arm as well as the disk
may not be the best idea. running a non-shimano disk on a shimano
caliper is ok, but not the other way around.
