I see some Shimano cassettes called things like HG70, HG50...then I see the 105/Ultegra cassettes etc. What's the difference?

(I think) 70's means Ultegra or Deore XT, 50's means 105 or Deore LX. As for as I know, there is no 60's series.

Some entry level Comfort/MTBs use HG30 and HG40 in 7/8 speed.

HG-70 is for LX & 105 cassettes. HG-50 is for Deore & Tiagra. I have cassettes of each type for both mountain and road.

Functionally there is nearly no difference. The price differences are related to weight and finish.
