32h/36h rim reference

32h means 32 holes needing 32 spokes
36h means 36 holes etc

32 is probably the norm though I'm likely to be corrected. 36h wheels are
stronger and I use them because of my porkiness.

If you trust your local bike shop, take their advice.

Number of spoke holes in the rim; must be the same as the number of
spokes in your wheel (or spoke holes in your hub).

And, obviously, the existing hub should have the same number of holes
as the intended rim.

You could but it would be a pig to build except for certain combinations
such as 18 spokes/36 holes.

Symmetry and stress. It's not impossible to lace a 32 hole rim to a 36
hole hub or vice versa, but it would be very difficult and would be
unlikely to end up with a good wheel.
