three speed to single speed conversion

There is more than one way to do this but, if you want advise about
converting the crank that you already have, you'll have to tell what
make, model, or style it is.

One very simple option that you have would be to decide which of your 3
chainrings you want to use, then adjust your front derailleur
appropriately over the chain and remove the shifter cable.

Just do half of what those SS websites say. You've got a couple of options, some
easy, others not.

You could replace the crank. Or, just replace the outer ring with a bashguard,
remove the inner ring and add a chainwatcher on the seat tube. Or, get long
chainring bolts and use inner and outer bashrings.

That's about all there is to it.
