Homemade Mincemeat
3 pounds green tomatoes, chopped and drained
1 cup cider vinegar
3 pounds [censored] apples, chopped
4 pounds firmly-packed brown sugar
2 teaspoons cloves
1 teaspoon nutmeg
1 cup ground suet
1 pound ground beef
2 pounds raisins
2 teaspoons salt
3 teaspoons cinnamon
1/2 cup butter or margarine
Rum or brandy to taste
In a large pot over medium-high heat, cover tomatoes with cold water;
bring to a boil for 5 minutes. Drain. Reduce heat to low. Add cider
vinegar, apples, brown sugar, cloves, nutmeg, suet, meat, raisins, salt,
cinnamon, and butter or margarine; simmer 30 to 45 minutes. Remove from
heat; add rum or brandy to taste. Refrigerate or pack in hot sterile jars
and seal.

from my Aunt Lois' collection. The card was very ragged so I'm assuming it
was well used.
4 pounds lean beef - boil and grind
8 pounds peeled, chopped apples
1 pound suet - grind
4 pounds raisins
1 pound brown sugar
1 quart cooking molasses
2 quarts sweet cider
1 tablespoon each - salt, pepper, allspice, cloves, nutmeg
4 tablespoons cinnamon
1 quart sweet wine - or Concord grape juice
Cook all together in large kettle until apples and raisins are cooked
medium temperature, careful of sticking. Put into quart jars and seal. If
any jars don't seal make a pie!

Date on card says 1947, also indicates that it was so popular it was sold
at a local market.

l pound suet
8 pounds apples
4 pounds sugar
2 pounds raisins
1 cup white vinegar
2 tablespoons cinnamon
1 tablespoon salt
Cook beef until tender, then run through meat grinder with suet. Pare and
quarter apples. combine all ingredients and cook one hour, stirring
occasionally. remove from heat and seal in sterilized jars. Makes 9
quarts.
