Duh! I'm slapping myself upside the head. (Gently, but still.) I'd
tried this after I saw a recipe somewhere - but it called for sliced
cauliflower. I figured the consistency of thickness was important, so I
did it. Do you know how hard it is to slice cauliflower evently - and
not have the pieces fall apart? It tasted great - but kinda bothery.
*Break* the cauliflower. Thank you!!

I make this all the time and eat it like candy. I'll add some
seasonings (garlic powder, chili, maybe some curry, dried herbs) and
roast a whole head. After taking it out of the oven, at least half of
the sheet gets nibbled on before it makes it to the table. Same thing
with broccoli, but I really love it more with cauliflower.
And don't dirty that extra bowl: just pile the florets on your
foil-lined cookie sheet, drizzle on the oil, add the seasonings, and
toss with your hands...spread out on the sheet and roast away.

I oil up the florets then toss in taco seasoning then broil on a cookie
sheet. Doing the same with curry powder is good too.
