How about this! Recipes for veggie icecreams. Worth trying on kids, or men, who need encouragement. I can hear it now - "If you don't eat your vegetables, you can have dessert."

So it goes without saying that you are disgusted by the thought of chocolate and chili icecream, and wouldn't consider rhubarb either.
I advise you to run a mile from any mention of Feran Adria, the alleged culinary genius who, among other things, has concocted sardine toast icecream!

Pumpkin ice cream is wonderful, but I don't have a recipe for it. I draw the line at fish.

And then there are the wonderful fruit sorbets as well. You know, you can't get blood out of a stone (I'm married to one). He'd no sooner taste a vegetable flavored ice cream than I would taste anything that had to do with meat. I ordered carrot juice for breakfast today in a restaurant and everyone at the table was "ewwwwwwwwwwwing" it. It's a sweet flavored juice, not really different than apple juice. Carrot ice cream might taste quiet nice!

Given the choice I'd rather eat a veggie or fruit than anything else. I am addicted to those whole fruit sorbets! I haven't me one I don't like, yet...Carrot ice cream would be lovely with the right spices added.

If a tomato plant is grown in a warm environment, it can grow for years. When I lived in the middle east, our downstairs neighbor had a tomato plant whose trunk was brown and as thick as my wrist! Ok, it was in a pot, but it was in the courtyard all year.

I made pumpkin fudge one time. Heck, we make pumpkin pie with sugar and spices. Pumpkins and cukes are IIRC in the pepo family, along with cantelope and other melons.

Yuck! they sound absolutely horrible. There are just some things you don't combine. Vegetables and ice-cream is one of them
A year or so ago I bought green bean ice cream pops from an Asian market. When my nephews, the non-veg eaters, came to visit and I had green beans that they refused, I asked whether they would eat them as ice cream. They snickered and said "yes." So I brought out the green bean pops. Believe it or not, they tried them (but didn't finish)! Actually, they were pretty bad, primarily because there were whole beans in it and the texture wasn't so good :P
I threw them out after the novelty wore off.
But the recipes in Christine's link look fine to me (except for the "Tomato and Toasty Bits" one).

Depends on what your definition of a sherbet is. I've always considered a sherbet to be a frozen mixture consisting of fruit juice, sugar, and milk although some recipes use whipped egg whites along with or in place of the milk. Water can be added to dilute the mixture if necessary. I remember checking out a book from the library several years ago and it gave the actual government standards as to what's the difference between an ice-cream, an ice-milk, a sherbet, etc. I was trying to come up with a recipe for homemade orange sherbet and I wanted to see just the actual ratios were between dairy, sugar, flavoring, etc. I learned that all sherbets must contain a certain percentage of milk solids, milk fat, sugar, fruit juice, stabilizers, and fruit acid, at least according to the U.S.D.A. they do.
