My wife bought home two pounds of tripatis today from a local Mexican meat market. I have over 1,200,000 recipes on the computer but nothing for these guys. Sure would like to have some suggestion on how to cook them and what you might have as side dishes. Suggestions to feed them to the dog or throw them out will be ignored. :-)

If you look up recipes for chitterlings or chitlins should be something there.

tripe is probably the most important ingredient in MENUDO!!!!!!
tacos are good too. some will argue that "true" tripas are the stomach lining of the cow, and some will argue that it of the pig...in either case they BOTH are yummy. however i would not cook it like a piece of meat ie. steak, chop roast etc...usually they go in soups and various forms of tacos.
which is why they say that menudo is good for a hangover. tripas is a natural form of pectin which absorbs alcohol. when i was growing up we had menudo and Barbacoa every weekend. no barbacoa it is NOT Mexican BBQ. it is basically cabeza. our neighbors would take the head of the cow and bury it wrapped in banana leaves on coals, sorta luau style after a few hours, a few tecates and a few shots of mescal it was ready. the brains, eyes, tounge EVERYTHING went into making the dish....and i must say that it is quite rich.
my mother LOVED the tacos (which is the normal way to eat it) until we told her what it is...she never touched it again. hahahahaha

Barbacoa breakfast tacos are available every morning where I work. I like them but when they cook the cabeza, the eyes, brains and tongues are removed. Tongue costs too much per lb. around here for it to be left in. ;-) I think most people just purchase cheek meat nowadays as it's available in slabs. -- Peace! Om
