Made homemade mac & cheese tonight (needed comfort food) using cheshire, sharp cheddar, and parmesan for the cheese sauce. Then I mixed the cheese sauce half-and-half with New Mexico red chile sauce, like you'd use over enchiladas, and tossed tiny shells through.
I woulda topped it with crumbs but I don't have any in the cabinet and my bread is down to the dregs so I couldn't maker fresh. Thought about trying to make tortilla crumbs, but it didn't seem right. (Coulda fried up tortilla strips and crushed em, but I didn't want then THAT crunchy!)
Served it with lightly steamed sugar snap peas, and half a grapefruit.
