Benefiber as sauce thickener? (cornstarch replacement)

  1. Ok, I know this is a weird question but I've gotta ask it...

    I've seen the Thick 'n Thin stuff mentioned as a cornstarch substitute
    but I was wondering if unflavored Benefiber ("regularity" product made
    with hydrolyzed guar gum) would work for the same purpose?

    I haven't been able to find the content listing of Thick 'n Thin but
    several sites have mentioned that it's a vegetable gum product that's
    all fiber. Sounds like the Benefiber....

    I have a big bottle of the stuff at home, was wondering if it would
    work as a sauce thickener as well as it's regular job.

  2. If it's guar gum it should work, not sure what the hydrolyzed does to it. I
    have used plain guar gum as a thickener.

    One of the big selling points of Benefiber is the fact that it doesn't
    thicken. Hydrolysis is the reason.

    I haven't tried it yet, but you might consider Kudzu root powder.
    While 10 grams has 6 grams of carbs, 4.8 grams of it is fiber. It also
    has 2 grams of protein and 35 calories overall. 10 grams of cornstarch
    has 38 calories, no protein, 9.1 grams of carbs and 1/10 of a gram of
    dietary fiber.

  5. I too looked at some of the products marketed specifically for this,
    like the Atkins (Thick n Thin??), but that was very exensive.

    I use Xanthan gum. I keep some of it in a small salt shaker and
    dispense as needed. Just a tiny bit does the trick. Your local health
    food store should have it or it or similar are available online.

    It does thicken but only the slightest amount. You would have had
    experience to observe the *very* slight viscosity change.
