Anyone know of any detrimental effects of consuming 1-2 ounces of parsley daily? I read there can be
liver and kidney problems.

There's lots of oxalic acid in there. Exactly how detrimental that is may depend on your propensity
to get kidney stones.

Sounds like Cecelia may be getting up to one gram of oxalic acid with that much parsley. If she were
to eat enough calcium with the meal it should bind most of the oxalic acid in her digestive tract
and pass out as solid waste before being metabolized.
