Hi.
I found out the hard way that i'm highly allergic to mushrooms but it
seems most if not all recipes call for a cup or two of mushrooms.
Any suggestions on a substitute? The mushrooms always seem to be a
filler ingredient.

Hi.
I found out the hard way that i'm highly allergic to mushrooms but it
seems most if not all recipes call for a cup or two of mushrooms.

Most if not all recipes for what? You'll probably get better
suggestions if we know what recipe you're trying to replace the
ingredient in!

What do you mean "filler"? Mushrooms shrink considerably when cooked.
They are really used for flavour - just omit them, and resign yourself
to a life without beef stroganoff.
Personally I would substitute spam.

what sort of horrid place do you live in where most or all the recipes call
for mushrooms??? Mushrooms! the most horrid of all chewable entities!!! The

Most if not all recipes for what? You'll probably get better
suggestions if we know what recipe you're trying to replace the
ingredient in!

Just leave them out. Filler is just that, filler. No need to add.

Pick another vegetable that's of the same water/chewy content other than
what's already called for in the recipe. Perhaps artichoke hearts?

My husband got me 30 minute meals' cookbook and it seems 1/2 the
recipes call for mushrooms. :-(
It was chicken marsala that caused the allergic reaction. Since I'm
not allergic to chicken we realized it was the mushrooms.
Other than the stupid "chick" this site is interesting.

Mushrooms aren't a "filler". They contain components (glutamates and
ribonucleotides) that enhance the taste of food. So you would also need
something else to brighten the taste if you omit them.

Really? What recipes are you referring to? There are probably tens of
thousands of recipes available that do not include mushrooms. In most
recipes that do include mushrooms, you can always leave them out and
perhaps include more of one of the other vegetables the recipe calls for.

So just omit the mushrooms the next time you make that recipe.

The best I could recommend is to try something other than a mushroom
cookbook for recipes. There aren't that many recipes for mushrooms that
you should have trouble finding something else to cook, and other than
mushroom soup there aren't many recipes that call for a cup or two of
them.

It depends on the recipe.
My wife is a shroom hater, so I sub a mild tapanade for the
duxelle (mushrooms) in Beef Wellington. It has a completely
different flavor, but it works well enough.

How about some super-firm tofu? In most Asian grocery stores, you can
find a soy product called "doufu gan" or "toufu kan"--it's a fairly
high-density soy product, which I can imagine as a textural substitute
for mushrooms.

Depending on the recipe, I would either omit them, use celery, some
sort of olive or olive paste/olivada/tapenade, or use nuts and/or meat.
It really depends on how the mushrooms are being used. I am not
allergic, but really dislike them, so I use other things all the time.
