Fudge Brownie Muffins

Amount Measure Ingredient Preparation Method
4 squares unsweetened chocolate (1 oz.)
1 stick unsalted butter (4 oz)
1 1/2 cups all purpose flour sifted
1/4 cup unsweetened cocoa powder
2 tsp baking powder
1 tsp baking soda
2 large eggs lightly beaten, at
room temperature
2/3 cup sugar
1/2 cup milk
1 cup semisweet chocolate chips
1/2 cup coarsely chopped walnuts
Preheat oven to 350 degrees. Line 12-16 regular size muffin cups with
paper liners. Melt the chocolate and butter together. Don't overheat.
Sift the flour, cocoa, bp, and bs together. In another bowl, whisk the
eggs, sugar, milk and melted chocolate/butter together until blended.
Fold the wet mix into the dry until moistened. Stir in the chips and
nuts. Spoon into the muffin cups, filling almost full. The batter is
pretty stiff. Bake 16-18 minutes or until center of muffin springs back
when touched. Remove from pan and serve Warm. Makes 12-16.

Notes: They're good; not terribly sweet, definitely not cupcake
texture.
