Its a choice the individual makes, i switched to clip ins after a couple of months of cycling and wow what a difference, you get more power on climbs and your feet don't bounce of the pedals on the bumpy trails, saying that i know folks who happily ride for years it sneakers and normal pedals.
I’ve had friends use the multi pedal one side clip and one side normal, this gives you the opportunity to unclip and still pedal properlly, however they converted to full clip in after a while.
With a bit of training it becomes second nature to unclip your cleats.
MTB shoes differ from road as you can walk in them without the cleats touching the ground, you don’t have to walk funny like the roadies.
The choice of shoes and pedals are plenty I’ve been happy with the 3 sets of shimano spd’s I gone through and my cheaper Olympic shoes are more comfortable than my fancy Nikes.
