Looking for sweet hush puppies recipes, sans onions

  1. I like hush puppies, but I can't stand onions. I live in the Northwest,
    so they're not exactly common around here in resturants, but I remember
    having some at a resturant in South Carolina that didn't have onions.
    Can anyone give a few recipes for sweet hush puppies?

    2 cups yellow corn meal
    2 tablespoons flour
    2 teaspoons baking powder
    1 tablespoon sugar
    2 teaspoons salt
    Freshly ground black pepper to taste
    Boiling water
    1 egg, beaten
    1/4 cup milk
    Oil for frying
    Heat oil in deep skillet or fryer to 375°F.

    Mix all dry ingredients except the baking powder. Pour in enough hot water
    to make a thick mush, making sure all ingredients are moistened. Add milk,
    egg and baking powder and mix thoroughly.

    Drop by spoonfuls (or use a small ice cream scoop) into oil, and fry until
    golden brown.

    NOTE: Increase sugar if you want them sweeter.

    Essentially, you can leave the onion out of any recipe; this is mine -
    the kids love them.

    Hush Puppies Nancy Dooley

    1 C. yellow cornmeal
    1/4 C. finely diced onion (optional)
    3/4 tsp. salt
    1/4 tsp. pepper
    2 tsp. baking powder
    1/4 tsp. cayenne pepper or 1 T. minced jalapeno pepper (optional)
    1 beaten egg
    1/4-1/2 C. buttermilk
    Oil for frying

    Blend together dry ingredients. Stir in onion and jalapeno, if using.
    Add beaten egg and gradually add buttermilk until a thick batter is
    formed (batter will be thick and a little lumpy). Drop teaspoonsful
    into hot oil; fry until golden brown, turning once. They are done when
    they float on the oil. Drain on paper towel and serve immediately.

    Sweetened fried cornmeal, i.e. Hush puppies is quite uncommon. Us'
    ns don't add sugar. You' ns can add sugar to your taste.

    breads, pies

    Add egg mixture to dry ingredients; Stir just until moistened

    In a heavy saucepan or deep-fat fryer, heat about 2 inches of melted
    shortening or oil to 375 degrees.

    Drop batter by tablespoons into hot fat frying only a few at a time,
    about
    2 minutes or until golden brown; turning once. Drain on paper towels.
    Keep
    warm in a 325F oven while frying remainder.

    Yield: 18 servings

    And add a little sugar to any recipe. I make mine like you do when I bother
    to make them. I don't often deep-fry stuff.

    I think 1/3rd flour to 2/3rds cornmeal works much better. They
    puff up more and a lot less dense, making them more edible for
    me.

    Different strokes. :-) I prefer them more dense and I like the grittiness
    of more cornmeal.
