All I have are leftovers in the house and david is battling the beginnings of
a cold so he is in no mood to go on a Lake St burrito adventure with me.
Last night (this is where the leftovers came from) I made a batch of naan
expecting to also make some sort of curry to go with it but I was out of
coconut milk and uninspired. I mixed cooked rice with black beans, frozen
veggies, tomatoes and mole sauce and baked it. Casserole. Hmm. I served it
with the naan and it was only okay.
Tonight I was digging around the fridge trying to find something better than
microwaved leftovers. On the bottom shelf of the door is a bottle of
Pickappepa sauce. I've heard of this, I've never tried it, I haven't a clue
where it came from. Read the ingredients and find tamarind, my favoritest of
all sauce ingredients. Try it and it's good.
So...
I take a leftover naan, grate some cheddar on it and toss it in a fry pan with
some butter while microwaving some leftover casserole. I plop the casserole on
the melted cheese and cover the whole thing in Pickapeppa.
Why! Why is it that I am 32 years old and this is the first time I have
discovered this sauce??? WHY??? I have so much catching up to do.
