  1. If elk has less fat and sodium than chicken, the same calories as chicken,
~66% more iron than beef, less cholesterol than light turkey, and about the
same protein as the other whole food protein sources, why is it not ate more
by people like us, or people trying to lose weight? Price?

Yeah, with those millions of head of elk on those thousands of elk

Well, I wouldn't say "millions," 😉 but a good size bull can feed my family
for most of a year. Chicken is cheaper, but chicken gets boring real quick.
The cost of a hunt in the fall is a helluva lot cheaper than the same amount
of chicken, or even beef. Is it laziness? Lack of time to go hunting?

I've been seriously looking into getting an elk ranch going. They eat a
third of what beef does, and every part of the elk is saleable. Antlers/felt
can be harvested every year. Pseudo-hunters pay good money to can hunt a
    trophy bull. Etc, etc, etc...

It tastes great. Better than venison in my opinion, and a lot like beef.
Even better in fact. My kids prefer it to beef. That is, if you take care
of it correctly. That would include cooling out the animal immediately
after killing it. Get the cape off, hang it and rinse it out. THEN it
tastes better than the best beef. Guys that leave the cape on end up with
    gamey tasting meat.

It can be dry, if not prepared correctly, because of the low fat content.

Good point. I wish I could remember how my ex fixed it because it was the

    Fraser

It can be quite good, but the points I make about caping and cooling out the
meat especially apply. And when you prepare it, there are some steps you
can take. Some soak the meat in milk before cooking it. My ex used to
bread it with some sort of spice mix. And be careful not to overcook it.
Because it's so lean, it ends up like cardboard if you do.
