    Indiana Sweet Corn Pudding
    Old Fashioned Creamy Corn Pudding

    Corn Pudding

    Amount Measure Ingredient -- Preparation Method

    1 pound whole corn kernels
    1 pound cream-style corn
    1 cup milk
    3 eggs -- beaten
    1 teaspoon salt
    2 teaspoons sugar
    fresh ground black pepper
    1/2 cup saltine cracker crumbs
    butter

    Preheat oven to 350 F and grease a shallow casserole dish. In a mixing bowl
    combine all ingredients, except butter, and mix well. Pour into prepared
    casserole, dot top with pieces of butter and bake until set, about 1 hour.
    Cool 10 minutes before serving.

    Indiana Sweet Corn Pudding

    Amount Measure Ingredient -- Preparation Method

    1/2 cup unsalted butter -- softened
    1/2 cup sugar
    7 large eggs
    4 15 oz. cans creamed corn
    1 cup all-purpose flour
    2 teaspoons baking powder
    2 teaspoons Kosher salt
    Freshly ground pepper
    6 ears uncooked corn -- kernels removed
    6 green onions -- thinly sliced

    Heat oven to 350 F. Cream butter and sugar in bowl of electric mixer until
    light and fluffy. Beat in eggs, one at a time, until smooth. Add creamed corn,
    flour, baking powder, salt and pepper; mix until smooth. Stir in corn and
    green onions. Pour into two greased 8-inch square baking dishes or one
    13-by-9-inch baking dish. Bake until golden brown and toothpick inserted in
    center comes out clean, about 1 hour 10 minutes. Serve hot, warm or at room
    temperature.

    Old Fashioned Creamy Corn Pudding

    Amount Measure Ingredient -- Preparation Method

    12 ears fresh corn -- kernels cut from cob
    3 tablespoons heavy cream -- or to taste
    salt and pepper -- to taste

    Preheat oven to 375 F and generously butter a 9 X 9 inch baking dish. In a
    food processor combine half the corn kernels with 1 tablespoon of the cream,
    salt and pepper to taste. Pulse just until corn is chunky, but not pureed. Add
    enough cream to moisten the mixture without making it too loose. Transfer
    mixture to a bowl and set aside. Process remaining corn, seasoning with salt
    and pepper to taste in the same way. Transfer to bowl with corn mixture and
    mix well to combine. Place in prepared baking dish and bake until top is
    slightly browned, about 30 minutes. Serve at once.
    If you prefer a golden top, place corn under broiler for 1 - 2 minutes.
