Drying celery

    have a dehydrator. What is the next best thing to use???

    Sharon, you can use your oven set to the lowest possible temp. Leave
    the oven door open a crack. The prep method according to Putting Food
    By is to split the outer stalks lengwise and leave smaller centre ones
    whole. Trim the leaves to dry as a herb seasoning. Cut stalks no
    larger than 1/4" pieces. Steam for 4 minutes. The book doesn't
    indicate a drying time but indicated the dry test as being brittle
    chips. HTH

    It's much less expensive to purchase commercially dehydrated celery and
    its quality is far superior to anything you can do yourself at home.

    I would if it was available today. My bulk food store is not near
    enough to make a trip today and I don't recall seeing it there. I may
    have to find another in a larger city......Sharon

    A box fan, 2 24" x 24" air conditioner filters and some bungee cords. :-)

    Seriously. It works.

    Lay the fan face down and place one filter on the intake side.

    Lay whatever you are going to dry on top of that filter, then lay the
    other filter on top. Secure everything firmly in place with the bungee
    cords.

    Personally, I only dry celery leaves. :-)

    And I have two inexpensive convection dehydrators.
    I dry my own dill too.

    But why do you need dehy celery for a stuffing mix? When ready to
    prepare the stuffing just use fresh... fresh onion too, and whatever
    fresh herbs if you have em... for stuffing if you use dehy veggies and
    dehy herbs it's much better to rehydrate them first anyway, so you're
    back to square one.

    I'm making a stuffing mix that I can pull out of the cupboard or
    freezer and use like stove top style. I did dry a batch (what I thought
    was enough for the recipe) in the oven turned out fine, but really takes
    a lot of fresh to get enough dry. So I called our bulk food store and
    they don't carry it. So I'll dry some more for this batch and next time
    find a substitute. Maybe celery seed......thanks....Sharon
