    Why is it that a newly opened jar of jam or jelly is of a nice
    solid, gelatinized consistency and then after a couple days it loosens
    up into a free-flowing goop. I keep my j/j's in the fridge. Is this
    the problem or is it just the nature of the beast?

    Totally free-flowing? Like liquefied? Ida Know.
    If it's 'weeping', that's called syneresis and is due to too much acid
    which makes the pectin unstable.
    Liquefied, Ida Know. Are you licking the poon and putting it back into
    the jar? I think saliva can break stuff down. Maybe that's your
    problem?
    Fridge is where they belong once opened.

    Well no, not exactly liquid. You know, kinda gloppy, like lumpy, but
    slidding off the knife kinda loose. Not at all like a freshly opened
    jar of jelly or jam, which is stiff and retains it's shape. C'mon,
    your jellies are no different. No I don't put my "saliva" back in the
    jar! ...with any product. Ick!

    If "syneresis" makes pectin unstable and this is normal, no problem.
    I just wanted to know the cause. Sounds like the answer I was seeking.

    once sat behind two Kraft food designers on a Metra (Chicago commuter) train
    and eavesdropped on their lengthy discussion of how they worked out a
    particular "kink" in a cheese spread product. Specifically, in testing it,
    they found that the saliva that kept getting put back into the jars by the
    users made the stuff toughen up and become unusable (I'll let you use your
    imagination on that one). Rather than drop the product in the name of all
    that is holy, they instead came up with some kind of miracle additive to
    prevent saliva-induced coagulation of the product. Kinda makes you think,
    doesn't it.

    JILS, that's a *wonderful* ( = "awful"😉 story. Saliva's got enzymes (?
    amylase?) that are extremely rapid starch breaker-downers. So I guess that
    when you lick that spoon real good and repeatedly as you spoon the goop out,
    there'll be enough blowback to start unravelling the longer starch chains...

    I had heard that saliva actually breaks it down and makes it
    runnier. It does that with several dairy-based, processed foods
    products usually in jars.

    Maybe they got carried away with the anti-coagulant and now it has
    the opposite effect.

    Sometimes that is due to taking Ambien. Apparently taking it can lead to
    binge eating during your sleep (plus weight gain). It was in the paper
    last week (*before* April 1st). Or did I read about ti in this ng? Can't
    remember.

    Not to say that I think you're taking Ambie. But if you are, go get a
    refund for the PB from the Ambien people 🙂
