Cooking with Maple Syrup

  1. DH called to say he wouldn't be home for dinner. We have threatening
    weather coming with tornado conditions this evening. So, I decided to
    play with maple syrup today before the bad weather hits. In the
    breadmaker on dough setting is maple oatmeal bread. It will proof in
    the breadmaker then I will bake it in the oven. In the oven, smelling
    and looking very good are maple oatmeal cookies. Both of these recipes
    are new to me so depending on the outcomes, I'll more than likely do a
    little tweaking.

    If you like cooking with maple, try Emerils Tarte Au Sucre, one of the
    prime ingredients being maple sugar. It was incredible. Luckily, we had
    some maple sugar that someone had given us. I went to the local maple farm
    to get some more and found out how much it will cost to make another pie
    :-(

    I use a fair amount of maple syrup and local honey since we avoid white
    sugar. We do use raw sugar occasionally. I don't find the price of
    maple syrup high considering the taste.

    where is the recipe? My boss taps his own trees and make syrup every year and
    I still have a pint to use up before this year's batch comes around.

    It's the one granola recipe we like the best.

  9. Been slow-cooking country ribs in a mixture of maple and soy lately.
    Not much maple flavor in the finished product but the ribs are great.
    May keep adding maple, trying for a hint of maple at the end, but I
    don't really want a sweet rib. Heck, I may be shooting my own foot
    since after browning the ribs I deglaze with a dash of red wine, cook
    down then add to the pot. The small wine residual is probably going to
    knock down any hint of maple remaining. Oh well, the rib are great
    whatever.

    Thanks Janet. I found the recipe. My first thought was it would be
    good made with cranraisins instead of raisins so I'll give it a try.

    Thanks Janet. I found the recipe. My first thought was it would be good

    We toss different dried fruits into it too. There's just something about
    that maple syrup flavor on the grain that is really nice and of course the
    cashews. Hope you like it.

  12. Here's mine... it's simple but very tasty (I had to go buy the real
    maple syrup first since I didn't have any; haven't tried it with the
    regular "maple syrup"😉. I also didn't use the non-stick pan.

    Pan-Roasted Maple Salmon (2)

    3/4 lb salmon fillet
    1/4 c dry white wine
    1 T *real* maple syrup
    olive oil spray
    salt, fresh gr. pepper
    (op.) 2 T parsley, chopped
    ....mix wine and maple syrup... set aside
    ....spray med. nonstick skillet with olive oil... heat over medium
    ....add salmon, skin side up...cover & cook 4 min.
    ....turn...salt & pepper cooked side ....re-cover & cook 2 min.
    ....spoon sauce over salmon ...cover & cook 1-2 min. (or until just shy
    of done in center-will continue to cook after removed from heat)
    ....(op: sprinkle with parsley)

    I was cracking nuts and remembered this thread! Those walnuts I had
    was a bit bitter and thought it would be great if they had a sweet
    glazing. Maybe you can roast your own walnut/ peacan etc... (sorry I
    have no idea how so no recipe)

  14. I make maple-glazed seitan. Toss the seitan with soy sauce, garlic
    powder, sliced onions, a bit of maple syrup, and a tiny bit of
    rosemary. Broil on both sides until caramelization starts. Really
    good.

    Last time I was in Germany, I bought it in a Bioladen. I saw it at
    Kaiser's, too. This was a few monbths ago.
