Hi, I am a little down. I worked in the social service field and spent
three years with a company only to have my one client who I worked
really hard with become institutionalize. He did have a lot of
problems, but I was making progress. Well, I just filed for
unemployment, and money is not the issue here, I am interviewing and
have a second interview today, which is good news. I just hate being
home. I am the type who has endless engergy and its funny, when I was
working , I would say I wish is could do this , or that or spend more
time doing a project and now that I have the time, you wind up doing
NOTHING!!!! Just focusing on getting back to work. Now I know I
will get a job, but I just hate not working. I cant milk the
unemployment for six months, I will go out of my mind. So here the
question, how can I not eat out of bordem, depression or just plain
fustration. I never thought I was an emotional eater, but now that I
am sitting home and self pitying, I just sit and try not to eat. This
sucks!!! Now I am going to get on my treadmill today at 730am, then
chill, then go to second interview, then go lift in afternoon then I
made it thru today, I am not used to this.

thanks good advise. I will stock pile xanex, at least I will be a
thin corpse. What I dont understand is why you posted. What was the
point. Obviously you could offer someone some compassion when they are
down?? You are a very mixed up person, at time you offer good advise
and at times you are a nut. You have an evil streak in you. -
Hey,
Just think of how good you look now that you've reached goal. You don't
want to have to do all of that over again, do you?
And since you have some extra time, why don't you go volunteer or something
to help others while you have some free time. The elderly, animal shelters,
etc.
Clean house, read, garden? Do some traveling? Go get a bike! You can

need to create a "routine" that you follow everyday just like when you were
working. Get up at a certain time, workout, clean the house, whatever it
takes to give yourself a sense of purpose. I was out of work for 2 years
and I know how boring things can get.--

Disposable american !!! Well I forced myself to get on that
treadmill!!! Did 40 minutes, and I can tell you I feel mentally
better. I am sorry for the poor victim routine here, I just am not
used to feeling so useless. I placed too much of myself at work, and
my identity. I was angry but that passed, now just a pitiful sack of
[censored]. I have a second interview and I am not going for by any means
a high class type corporate job, just a job. I dont need to work, I
want to work. Two years, both how did you deal with it?? They say all
this [censored], like you find your meaning and [censored] do believe that? I
can't imagine how [censored] you must of felt but did you land what you
wanted? It funny when we should band together we stab each other .

The Endorphin rush is actually better than the Endorphins from
pleasurable eating.And I've personally found that it supresses appetite.
Find a good handcraft hobby to keep your hands and mind busy.
Watch videos while you do it.
And then there is always home made chicken stock and Shiratake
noodles..... ;-) Almost no calories to them. Celery sticks are good too.
Sastisfying crunch and almost no calories.

how do you make a good home made chicken stock?

You did ask how do YOU make etc, so this is what I do. I usually buy a
couple of packages of chicken backs from my grocery store, about 2-3 lbs
or so.(If not backs, then chicken quarters; whatever is cheapest). I
then cut a good sized onion in chunks, and toss it in the pan with the
chicken. I add a couple of sticks of celery, chopped in chunks, with
the leaves on it. I cut up a couple of carrots, in 1 inch pieces. I
cover the lot in a dutch oven with water, add a bayleaf, some salt and
pepper. I bring this to a boil, then let it sit on the stove for an hour
or two to simmer really low..Then I strain the stuff through a colander, or sieve, and let the broth
sit in the frig. When it is good and cold the fat will have risen to the
top and hardened. The broth is almost always "jellified", as in
concentrated. I remove the fat and throw it away, put the stock in a
pan, and heat it up. I adjust the salt and pepper to taste, or sometimes
toss in a bouillon cube. When it tastes right, I freeze it in one or two
cup amounts, label it concentrated stock..........and voila, that is it.For use, I will sometimes dilute it or somtimes use it straight,
dependig on the use. Being somewhat "thrifty", I usually pick the bits
of meat off the chicken, and add that to one of the containers for a
future home-made chicken soup.Easier to do than to type!!

Seriously, do the stuff you'd been putting off. Stuff you want to do.
It's easy to vegetate and do nothing when no one is counting on you to
show up at a certain time, but ya hafta butch up and get past that.
Build something, do a home impreovement project, whatever.And if you really, really need someone to provide external motivation
for you to do things - call your local United Way and ask which
agencies need volunteers. That will give you someplace you have to go
becuase people count on you, just like a job. -

I happen to be making some right now. My grocery had chicken leg
quarters on sale @ $.25/lb.You need something other than white meat. A whole chicken is good,
including giblets and whatnot, but legs or backs work also. Breasts
and wings make very disappointing broth, IMO.Chop up a bunch of celery, onions, carrots and parsley and add them to

reduce heat to simmer and let simmer until the meat falls off the

veggies (they're flavorless at this point), but save the meat.You can use the meat for chicken salad or something if you're not going
on to make soup. If you are going on to make soup, chop up a bunch
more veggies and put in a pot, discard the fat layer on top of the
broth and add it to the pot, add the meat back in and simmer until the
veggies are tender.I do not add salt. I prefer to eat chicken soup with either Parmesan
or soy sauce, which I add at the time of serving. Doesn't work so well
if the soup is salted though.You can store either broth or soup in small containers in the freezer
if you don't have a pressure canner.I can mine. I bought 40 lbs of chicken leg quarters and am at the
refrigerate the stuff point today. I'll be canning quarts of soup for
days now.Another very good broth you can make is... save all your veggie
peelings and the "bad" bits you cut off when prepping veggies in a
tupperware in the freezer for a month or so. Then make broth, and
freeze or can in pint or half pints for use as a seasoning when you
cook. This is good stuff and it pleases my frugal side to make food
out of what would've been garbage. -

I make broth similar to jackiepatti. If you put the chicken in
cheese cloth I find it is much easier to separate the meat and pick
the flesh off the bones for use in soup and stir fry.

My personal preference is to use chicken feet, but that grosses a lot of
people out.Get the cheapest chicken, usually whole chicken or chicken hindquarters.
Cut them up a bit and toss them into some water. About 1/2 gallon of
water per lb. of chicken works for me.Add at least 6 cloves of fresh minced garlic per 1/2 gallon, plus 1
whole onion and some fresh grated ginger.Simmer for 2 to 3 hours then strain off the solids.
Refrigerate the resulting stock to defat if desired. Salt and pepper to
taste when you go to use it.Personally, I pressure cook meat/bones for 20 minutes then go from there.
My preferred chicken feet get pressured for 45 minutes, then strained
off.

I don't use carrots to make stock. IMHO the flavor is too overwhelming.

Sodium doesn't bother me. I just omit the salt in the recipes I use it in.
Stuff needs a bit of salt to taste right anyway. They do have a low sodium

There is no comparison between home made and canned.
Not just in flavor, but in texture.A pressure cooker honestly makes it no work at all.
I do add salt to taste.......
