Been up to the BrunsBUG Shed at CERES in East Brunswick? The chaos factor seems to of been tidied up recently. Or has it? 😕

Great idea.
Just some practical problems as I see it;

1) Location. It is really, really hard to get free space now. Nowadays,
Businesses tend to sell off land and old factories that are not
currently needed and what is standing is asbestos ridden or "No" because
of public liability concerns (you have to afford in-sewer-ants as
well[1]).

Of course, if you are goign to do the co-op cafe approach, then it
really is a business. Hint, negotiate for rent-free start up time.

2) bike donations, are hard to get unless/even if "admission" is to
bring a klunker and what ever you get sets your standard. I don't know
the attitude of the various LBS to donating stuff. Tthey would be ideal
if they would come to the party.

You could also look at blitzing council throw out days where you start
at midnight and cruise the streets looking at all the stuff put out for
council collection. Bee choosy, steel scrap isn't worth the petrol to
collect it. Unfortunately, our council responds to individual demand and
everything goes into contractor compactor truck and it is not use at
the other end.

3) if I remember correctly, the LA mob had a major chop shop section,
which means your facility must be suitable for cutting, grinding and
welding. So, if you are going to do this sort of building, you need a
competent welder to instruct. You also need someone who is workshop
savvy to decrease the number of likely accidents.

Okay, this is wrong, but if you are looking at chop shopping, the it
applies.

4) if you run a $ kitchen, then you have to do it properly and treat it
like a business, aka no free snacks, etc. Also, the bicycle part will be
the easy part.

I'd hazard a guess that the Kitchen is really a good co-op cafe and the
owners decided to sponsor some "bicycle activities" to draw in a unique
customer base.
