  1. Yesterday I was in a Kaufmans Dept Store in Horseheads, NY (Yes there
    is such a place)
    There was a package deal on Calaphon knives, an 8" Chefs knife and a
    5" Santuko (sp) knife, marked down to $29.99.

    Right beside it was a Henckles 8 inch chefs knife for $99. The two
    knives looked identical, to the spacing between rivets, the position
    of the words "stainless steel" on the blade, the exact handle shape,
    etc.
    Is it likely these two knives are made by the same company and simply
    sold under different names. I imagine that there is a very high
    profit margin on knives.. Opinions?

    International for $12.99US at my local Target store. Works like a charm,
    and unfortunately will cut thru a knuckle like it was butter - I did that
    last night. Still have to get the knack of curling the fingers in for
    quick chopping.

    That's the knife I have. I bought it at our local dept. store
    (Zellers) for 25. Canadian funds. More than yours, but a very good
    knife. No cuts yet, but I start out slow and practice. I'm sure it'll
    bite me sooner or later....lol....Sharon

  5. The Calaphon knives I have seen were ground off center - a sharpeners
    nightmare. They were from T J Maxx, so possibly they were seconds.

    Do you know which series of Calphalon and Henckel they were selling?
    Could account for the higher prices. Calphalon's higher priced brand
    may have been more comparable to the Henckel.

    celery, onion, tomato, butter, thyme, pepper, Clamato juice and
    Worchestershire...shire sauce over Texmati rice. Leftover salad.

    I was lucky enough to get some Henckles Santoku knives at the Navy
    exchange last week. A set of 2 (7" and 5"😉 for 17.99. I really like
    them. I don't know what model they are - I didn't see it on the
    package, nor do I see it on the knife itself. They aren't 5 stars
    though....I have a set of those and the handles are much different.
    *shrug* I like 'em and for $18.00 ya can't really do better lol

    I think there must be a world of difference in Santoku knives. I got two
    from a Penny's special sometime ago, and they were better for handling for
    DH, but I stopped using them. Then I got a set of 3 at Costco for $49.95 I
    believe a 5, 7 & 9" - something like that - and they are quite nice for
    handling for me, as well as cutting.
    We get lucky when we buy knives because I think it takes a little handling
    before one can really tell.
    Sounds like you got a good deal.
