Need salad dressing ideas?

  1. Finally forced myself to go back on Lyle McDonald's protein fast crash
    diet here for a bit.

    Miserable diet, low calorie, low carb, no fat.

    120 grams of protein per day for me plus green veggies only. Will be
    using mostly celery, spinach, string beans, lettuce only salads, steamed
    spinach...... you get the idea. Rabbit food along with the meat. <G>

    Have weighed and measured out the meat portions and put them in the
    freezer for day to day meals. I gained a little weight back over the
    holidays!

    Already back in ketosis after only 2 days. Yay!

    Anyhoo, what I need is ideas for dips/dressings for veggies that is fat
    free AND sugar free! No lemon juice and I can't stand vinegar. :-P I'm
    using small amounts of Pace Picante sauce for the canned tuna, and just
    salt for celery.

    Any ideas? It's a very spartan diet, but it won't be for very long. I'm
    just trying to boost initial weight loss.

    It's a MUCH stricter diet than Atkins!

  2. How about creamy dressings based with either fat-free yogurt or
    buttermilk? Shaken with some herbs and garlic......do you like any mild
    vinegar like rice wine vinegar?

    Or use an immersion blender to mix an 8-oz container of fat-free plain
    yogurt with some lime juice, cilantro, and peeled seeded cucumber.

    You could proably try this with basil instead of cilantro as well, add
    some oregano and thyme to it, skip the cucumber or replace it with --
    maybe bell pepper?

    Maybe you could do something using olive oil, and soy or tamari for the
    'acid'? Add some garlic and ginger to make it an oriental dressing? A
    little blean sauce for flavor?

    Ideas, never tried, except for the cilantro-lime-cuke, which is a
    standard around here.

    I'll pass on the cilantro, but the other sounds good. Have to watch
    lemon/lime juice as they contain fructose.

    Hate bell pepper, but Cucumber is a good idea!
    I have live basil in the greenhouse. Live/fresh herbs are going to be
    the key here methinks. Just gotta figure out the best way to extract
    them. Water and soy sauce with fresh herbs in the blender perhaps?

    Mustard contains essentially no calories.
    Horseradish contains essentially no calories.
    Toasted sesame oil requires so little that it's use entails essentially
    no calories.
    Soy sauce contains no more calories than black coffee.
    Unflavored gelatin is an excellent low/no calorie thickener.
    Don't forget garlic, onion, and other herbs... and various pepper(s).

    I happen to like oriental flavored aspic as a condiment/dip/dressing...
    can even prepare a veggie aspic, perhaps with some sort or seafood
    (shrimp).. can even be an oriental tomato-shrimp aspic, with shredded
    napa and bok choy... some carved carrots, snow peas, and green onion
    garnish. How you react to swallowing gelatinized textures... you may
    even enjoy a good headcheese with horseradish mustard rolled in romain.
    I once prepared oriental gelatinized shrimp cubes for guests as an
    appetizer, sorta oriental gefilte fish... were well received.

    How about a dressing using Miso?

    1/2 cup roasted nuts
    1 TBSP miso
    1/4 - 1/2 cup water
    Grind nuts, add miso and water and mix.

    I like this recipe, but must confess I use light olive oil instead of the
    water.

    3 TBSP miso
    2 TBSP rice vinegar
    2-3 TBSP water
    1/2 diced or grated onion
    1 tsp. parsley

    Broad Question for anyone. Is there anything that can be substitued for
    lemon or vinegar? ...Lime, I guess, what else?

    I'd totally forgotten about Mustard. It'd make a great base!
    Soy sauce is already in use, heavily, as a meat marinade. <G>
    Never thought of gelatin as the thickener. That's protein based.

    I lost 50 lbs. last year Jan. to Nov. but got stalled for a few weeks so
    gave it up. I understand that happens with low carbing. Ate more carbs
    Nov. thru Jan. and gained back 18 lbs. Some of that is Glycogen/water
    weight but still. :-P

    Time to hit it hard again. Still got a LONG ways to go!

    I have some Miso out in the Hobart, but it's been there awhile. No mold,
    but how long does Miso keep at 40 degrees?

    Sounds interesting!

    I'd have to wilt the onions. Don't care for them crunchy, but there are
    currently wild spring onions coming up in the rock garden out front. The
    rock garden is the only place the wild onions have survived the border
    collie. <G>

    They are only good until they bloom, then they lose flavor.

    Very spartan, but there are a goodly number of greenies in the Produce
    section at Sun Harvest, Celery, Chard, Sprouts, 3 types of cabbage, 5
    types of lettuce, Endive, Beet tops (dad can have the beets!), and a
    variety of sprouts including alfalfa, sunflower, radish and clover, and
    there is also Watercress available.

    Fortunately, I like greens. ;-d

    I'll probably follow this for 5 or 6 weeks, then go back to Atkins. It's
    a bit easier to follow. ;-)

    In the mean time, this kind of thing (weighing and measuring food for
    portion and calorie control) is excellent for self-discipline.

    I use a little bottled low-fat or fat-free french dressing, and then
    douse the salad with a hot sauce like Trappey's red Louisiana hot sauce
    (it's like tabasco but much milder)

    You might try using Sriracha (sp?) "rooster sauce" on a wilted salad.

    Benefiber(R) is a water soluble vegetable gum (guar gum) that ought to
    work as a stabilizer in homemade salad dressings. I've ordered a free
    sample from Novartis to play with it.

    You have to be careful with bottled fat free dressings.
    A LOT of them contain sucrose, but label reading is a must anyhoo. <G>

    Here's a few suggestion.

    Pico de Gallo without the sugar?

    3 cups chopped tomato

    1/2 cup chopped onion

    2 jalapeno peppers seeded and finely chopped 3 tbs. lime juice

    1 cup loosely packed and chopped cilantro

    (ordinarily a 1/2 tsp. of sugar would be added)

    mix all ingredients together in a large bowl.
    ----------------------------------------------

    Salsa puttanesca

    2 tbs. finely minced garlic

    2 cups diced roma tomatoes

    4 tbs. capers

    1/4 cup Nicosia olives

    salt and freshly ground pepper.

    (ordinarily the the garlic would be cooked in a couple of tbs. of olive oil)

    Combine all ingredients in a sauce pan and heat just to simmering.

    Scarlet plum salsa - makes 1 quart

    1/2 cup frozen cranberry or raspberry concentrate or a combination of both

    1/2 tsp. ground cinnamon

    4 whole cloves

    2 slices fresh ginger, 14 inch thick and 1 inch in diameter

    zest of 1 lime

    6 scarlet plums, pitted and finely diced

    1 sprig fresh mint

    1/4 pound jicama, peeled and finely chopped

    1/2 red onion finely chopped

    2 tbs. fresh cilantro, coarsely chopped

    /1/2 jalapeno pepper, seeded and minced

    2 passion fruits

    In a small sauce pan over low heat, combine the concentrate, cinnamon,
    cloves, ginger, lime zest, and mint. Simmer for 8 minutes. Remove from
    the heat and add the lime juice. Set aside.

    In a large bowl combine the plums, jicama, onion, cilantro, and jalapeno
    peppers and toss until thoroughly mixed. Strain the juice mixture over
    the fruit.

    Scoop out the fruit from the passion fruit; place over the salsa mixture
    and mix thoroughly. Refrigerate for at least 2 hours before serving.

    You might also try combining 4 tbs. of dry mustard (i use colemans)
    with 6 tbs of vodka, gin, white wine & etc.

    Some good ideas, but fruit is out, as are onions for the most part,
    lime, jicama is mostly starch.....

    Olives are high in oil/fat.

    No tomato. (wah!!!)

    I can make due tho' with the flavoring ideas, thanks!

    Mentioning Putanesca... Anchovies crushed and blended (and diluted!) are
    VERY flavorful!

    I have no idea how long Miso keeps, I have mine in the fridge. Are you
    talking 40 degrees celcius/farenheit?

    Finally forced myself to go back on Lyle McDonald's protein fast crash
    diet here for a bit.

    Miserable diet, low calorie, low carb, no fat.

    120 grams of protein per day for me plus green veggies only. Will be
    using mostly celery, spinach, string beans, lettuce only salads, steamed
    spinach...... you get the idea. Rabbit food along with the meat. <G>

    Have weighed and measured out the meat portions and put them in the
    freezer for day to day meals. I gained a little weight back over the
    holidays!

    Already back in ketosis after only 2 days. Yay!

    Anyhoo, what I need is ideas for dips/dressings for veggies that is fat
    free AND sugar free! No lemon juice and I can't stand vinegar. :-P I'm
    using small amounts of Pace Picante sauce for the canned tuna, and just
    salt for celery.

    Any ideas? It's a very spartan diet, but it won't be for very long. I'm
    just trying to boost initial weight loss.

    It's a MUCH stricter diet than Atkins!

    I like mustard for my tuna--does Lyle allow mustard? There is a brand of
    no fat, no carb, no calorie dressings--Walden Farms, perhaps? I recall
    that they weren't too bad for a mess of chemicals...You said you can't
    stand vinegar, but does that include balsamic? And perhaps Mrs. Dash
    seasonings would help jazz up the vegies when cooked.

    Mustard contains essentially no calories.
    Horseradish contains essentially no calories.
    Toasted sesame oil requires so little that it's use entails essentially
    no calories.
    Soy sauce contains no more calories than black coffee.
    Unflavored gelatin is an excellent low/no calorie thickener.
    Don't forget garlic, onion, and other herbs... and various pepper(s).

    I'd totally forgotten about Mustard. It'd make a great base!
    Soy sauce is already in use, heavily, as a meat marinade. <G>
    Never thought of gelatin as the thickener. That's protein based.

    Don't see why not. ;-)
    It's a spice mixed with vinegar and water.
    No oil, essentially no calories.

    It's a dressing of choice for low carbing, I'd just forgotten about it!

    I actually do use VERY small amounts of vinegar in cooking as I've
    infused it over time with herbs. Next to the stove is a bottle of dill
    vinegar and some basil/thyme vinegar. I use it mostly for fish.

    A 40 cubic ft. double glass front door commercial unit I inherited from
    the lab at work when they upgraded equipment! :-) Got it for free, it's
    worth over 3 grand.

    I did, however, finally ended up having to replace the compressor this
    year to the tune of $900.00 (ouch!) but this 'frige is 30 years old so
    it should be good for another 30 now. <G>

    It's awesome having that much refrigerator space, and it has a temp.
