    Rotisserie chicken marinated and injected with Wishbone Italian Salad
    Dressing. YUMM!! That's what I brought to our Valentine's Potluck @ our
    church on Sunday. That and I made bread sticks shaped as hearts.

    Red-cooked, or loo, chicken. Choose wings or drumsticks. If wings,
    cut in three pieces, discard the tip (or save it for stock). Mix up
    all the ingredients, add chicken, simmer slowly until done, cool in
    liquid, then remove and drain. Good hot or room temp. Couldn't be
    simpler. Here's a list of basic ingredients. Quantities can be halved
    or doubled --

    Chinese Red Sauce -- Loo

    1/2 cup Chinese rice wine or dry sherry
    1 teaspoon sugar - brown or white (or a chunk of yellow rock sugar)
    2 garlic cloves, smashed
    2 cinnamon sticks
    3 to 5 star anise, whole, or the equivalent in pieces
    1 large knob of ginger - peeled and sliced
    1/2 cup light soy sauce
    1/2 cup dark soy sauce
    3 cup chicken stock (or water, or a mixture)
    1 or 2 dried red chiles (optional)

    In a large deep sauce pan, heat the rice wine and sugar together until
    the sugar is
    dissolved, stirring constantly. Add the remaining ingredients. -aem

    Chicken stir fried rice or lo mein
    Chicken tetrazzini
    Hot wings
    Shredded chicken and barbecue sauce with buns on the side
