  1. So, what's a good way to prepare a couple of skatewing filets?

I simply cut into manageable pieces, shake then in a bag with seasoned flour
(whatever you like, I usually stick with sea salt, white pepper and
sometimes a little chilli powder or lemon pepper), then shallow fry in a mix
of butter and oil (usually canola oil)

simple and doesn't overpower skate's wonderful flavour

Pan-fried in browned butter with shallots, is my favorite.

I think "shallops"... as in Barb's browned butter scampi! hehe

Another way (since there are several 'fry' replies out already) is to poach
them in lots of water with some pickling spice (mix of whole allspice, mustard
seeds, peppercorns, bayleaf, chilies) then fish them out and serve floating in
    a mustard sauce or a butter&dill sauce.

  8. Thanks for all the suggestions.

I ended up pan-frying the skatewings in butter and olive oil,
and serving them with a homemade tartar sauce - fairly simple,
just to get a feel for how to do it next time.

The fish was delightful. I'm thinking of a homemade wasabi
    mayonaisse next time.
