What special dishes are you planning for tonight's holiday dinner?
For me, it will be sauerkraut with thin pork chops and some small
ribs. Also boiled potatoes and Cherry Cheese Strudel and a wine,
which I have not chosen as yet.

having mushroom/swiss hamburger steaks w/ a shallot & garlic red wine
reduction.. field peas and snaps... pan seared okra, caprese and a

holiday. What's for dinner on Groundhog day just has a ... road
kill ring to it, don't you think?(smile) Well, seems there is bickering among the various
groundhogs who cannot agree about the 6 weeks of winter.

In honor of this holiday I am cooking up some ground hog today and I
thought I would share with all of you how I cook groundhog on the
smoker.Most old timers will tell you that you want a good young woodchuck as
the older ones aren't so much tougher as they are fatter. If the
groundhog you harvest has a lot of fat, you will want to parboil them
before you put them on the smoker. But we aren't even ready for that
step yet.Once the varmit has been gutted and skinned, cool the carcass with
cold water. Make sure you remove the scent glands from the forelegs
and the small of the back. These are little nodule sacs that must be
removed or if you don't, there is no point in reading the rest of this
recipe as the meat will be ruined anyway.......Once the meat has been cooled and scent glands removed, package and
freeze for future use or place meat in container with salt water
overnight inside refrigertor.Now some folks like to cook the carcass whole and this works fine for
a big groundhog which around my part of the woods goes about 8-10
pounds. On the smaller groundhogs, I just cut the legs off and cook
them like I would rabbit or squirrel parts, this allows me to cut off
the fat without parboiling too.If you are cooking the carcass whole, you will want to parboil it to
remove some of the excess fat. Make sure that you pour the water off
the carcass while it is still in the pot instead of removing the
carcass from the water. This way you aren't dragging the meat through
the grease you are trying to get rid of in the first place. Depending
on the size of the critter, 30 minutes is usually long enough boiling
time.Once the meat is ready for the grill use the rub of your choice. I
like to cook the meat at about 250ºF until the meat is almost falling
off the bone. If I am cooking the whole carcass, I will place it on a
platter before putting it on the smoker. The woodchuck is done when
you can easily pull a leg from the carcass.Once the meat has been removed from the smoker, just pull it or debone
it like you would with a pork butt or a raccoon carcass. Place the
deboned meat in a pan and cover with a mixture of apple juice and BBQ
sauce of your choice. Place pan back on smoker for another 20 minutes
or longer to reheat or if necessary, cook a little longer. Once meat
is back up to serving temp, break out the white bread and serve it up
just like a pulled (whistle) pig sandwich. Enjoy!Lager,
