Bone Soup

  1. I had a large meaty bone left over from a fresh ham. Hmmm...what to
    do, what to do...good for soup, but no smoky flavor..I took some very
    heavily smoked slab bacon - about 6-8 ounces, cubed it, cooked it up
    in the bottom of a heavy soup pot.

    In went.........

    1-1/2 tbs of medium heat chile powder
    1 large diced Spanish onion
    3 diced celery stalks,
    2 cut up carrots,
    3 garlic cloves
    2 fresh bay leaves
    1 small can of chiles
    1 large can of tomatoes, with the liquid
    1 lb of pre-soaked black beans
    1.5 quarts of chicken stock plus some water to top it all off

    ....and of course, that big bone.

    Not bad...not bad at all. Served with a squeeze of lime and some
    chopped cilantro.

    Lentils and split peas also go well with ham bones.

    The soup was really, good, I have to admit. Tomorrow we will have it
    over rice, I think.
