Sweet Potato Pancakes

  1. Today I'm going to make sweet potatoe pancakes for a lunch. A friend of
    mine in SC sent me a 2lb package of sweet potatoe pancake mix from one of
    her favorite restaurants in SC called Joseph's. You add equal parts of mix
    and water. I think I'll top them in the traditional way with some cinnamon
    butter, toasted pecans and real honest to Gawd maple syrup.

    Oh, those will be good! Haven't had them in a long time. Also, sometime
    when you're thinking of making latkes, make them with shredded sweet potatoes
    instead of white.

    Those sound *really* good! I have a house full of kids who won't eat a
    sweet potato unless it's baked into something sweet like a muffin or
    biscuit. We've never tried sweet potato pancakes, but I bet they'd be a hit
    here. Hmm, I remember somebody around rfc mentioning sweet potato waffles.
    I'd better get to work on some of this stuff!

    Made them by accident one time and they were really good. Ran out of
    yukon gold and had a few sweet potatoes on hand. They were about 50/50
    regular/sweet.
