  1. Cook 1 cup of long grain rice per package directions, that is to say, a
    ratio of 2 cups water to 1 cup rice with about 1 Tbs. butter added. Except
    I used chicken broth instead of water. Simmer covered 20 minutes and don't
    lift the lid to peek at it or stir it. Peeking and the temptation to stir
    is what causes so many people problems with making rice without a special
    "cooker" 🙂 If desired, add some salt before you start this. It's not
    necessary.

    On the side, steam about 1 cup of broccoli florets (I used frozen - broccoli
    looks really bad around here this time of year and is waaaay too expensive,
    kinda like cauliflower LOL). I didn't actually steam it; I nuked the
    broccoli florets in the microwave with just a little water. 5 minutes;
    done.

    When the rice is done, stir in 1/2 cup of grated cheese, I used cheddar but
    you can use any good melting cheese; I'm thinking gruyere or fontina for the
    next time. Stir in the broccoli. Stir until it's mixed well together and
    there you have it! A lovely side dish!

    That's pretty much how I make mine as well. The question for me is:
    How do I get DH to accept rice as a valid side-dish? He will eat it
    begrudgingly, no matter how I prepare it. He's a potato guy. :/ I
    *loathe* cooking potatoes.

  3. A lovely dish indeed.I am a Chinese.We sometimes boil rice with string
    bean.And I aslo like fried rice .There're so many ways to cook rice in
    our country.Oh,our Spring Festirval is coming,and I can eat
    eight-treasure rice again!

    Well... hmmmm. I don't know, just don't give him a choice? Potatoes are
    fine and dandy but sometimes rice is just the way to go. How does he feel
    about noodles? You can do the same sort of treatment I did with the rice
    with small egg noodles. Lucky for me, John will eat just about anything I
    put in front of him. Unlucky for me, his dinner of choice is pizza. It's
    okay if we're on the road but not my idea of dinner if we aren't in a motel
    😉

    been able to find that on a couple of restaurant menus.

    I've never heard of eight-treasure rice. I'm gonna have to google it.
