Here's a response from my limited experience. I had one day in Moab, so I rode Amasaback. Everybody
I know and ride with ride there, though. In case more knowledgeable folks don't weigh in on your
question, here are my thoughts, and I ride a fairly varied terrain the West,NW of the U.S.
Amasaback and/or Porc Rim, for a combination of terrain and views.

Both are fairly tough. I would say Amasaback aerobically, and Porc Rim more for technicality.

You'll probably be fine, if you're used to lots of rock leges. If you're not, you will be within
20 minutes.

Riding your bike. Or if you're a climber, 30 minutes south is the Indian Creek area, for some great
big wall, crack climbing. Look at the opening of Mission Impossible II for what this looks like.
