  1. I soaked some beans overnight on the counter, but didn't use enough
    water, I guess, and I forgot about them till just now when I came home
    from work. they split open and smell "sprouty", but not spoiled they
    will still be safe to eat, right?

    Yes. If you lived in a very warm climate, and you were serving them raw,
    like in a 3-bean salad, you might want to start over. But, if you're cooking
    them, you'll be fine.

    If you are going to cook them, they should be fine. You might boil them for
    a few minutes just before continuing your recipe. The only issue I can see
    is perhaps some of the shell may peel off during cooking but it should not
    pose a problem.
